The Chef Miguel Ángel Expósito and Sommelier Miguel Ángel García, gave a master class "Symbiosis between kitchen and hall" last Wednesday at the Santa María de Alarcos Institute for the 25 students of the Intermediate and Higher Grade of Hall and Kitchen.
Miguel Ángel Expósito is in charge of the Retama restaurant, with a Michelin star and located in Torrenueva in the province of Ciudad Real. For the chef, the bases of his cuisine relapse in using local and seasonal products, thus taking advantage of the rich and varied gastronomy of the region.
For his part, Miguel Ángel García, hall manager and sommelier at Retama, described to the students the keys to the correct functioning and management of a restaurant, highlighting the importance of doing things always with customer satisfaction in mind and the importance of making a good selection of wines, because not only what the diner is going to eat matters, but the pairing of the dish is fundamental, since it can provoke more sensations.
Both masters of haute cuisine wanted to transmit their knowledge to all the students, providing them with ideas, advices and skills to acquire in order to motivate them, highlighting the importance of checking and taking care of even the smallest details, since these are the ones that are going to make a difference and insisting on the importance of forming your own identity and innovating.
In the class, exquisite dishes were tasted, all of them prepared by the Chef, which are served in the Retama restaurant itself and in turn paired with wines that enhanced the qualities of the dishes. One of them, of course… Our Sirena del Maar, a rosé wine, 100% syrah, pale pink in appearance, with lively but light orange notes appearing.
With different flavors, extraordinary on the palate, red fruits, sweets, flowers... very refreshing, with acidity and great mineralization. The Legend says that the winds that pass through the top of the Volcano delicately rock the vineyards, giving them a special flavor to their grapes, they even make their branches sound in the wind, being able to hear a Siren's song from the top of our Maar.
